CURRY TUNA SALAD 
2 c. rice, cooked
2 cans tuna, drained
1 c. celery, diced
1/2 c. coconut
1/2 c. cashews, chopped
1 (13 oz.) can pineapple tidbits, drained
1 1/2 c. mayonnaise
1 tbsp. curry powder
1 tbsp. salt
1/4 tsp. pepper
1 tsp. onion powder
2 tbsp. lemon juice
Dash of Accent

Combine first 6 ingredients and toss lightly. Set aside. Combine remaining ingredients and mix well. Pour over tuna mixture. Mix well. Chill and serve.
