SHRIMP SALAD 
2 lbs. shrimp
2 tbsp. mayonnaise
2 tbsp. sweet pickle relish
1 tbsp. lemon juice
1/4 c. finely chopped celery
1/4 c. green pepper, chopped
1/4 c. onion, chopped
1 hard boiled egg
Salt and pepper

Boil shrimp in water to cover until bright pink (about 8 minutes). Cool, peel, devein and chop. Add all remaining ingredients and mix thoroughly. Chill. Serve on bed of lettuce garnished with tomato wedges, boiled egg slices and sweet pickle slices. Serves 6.
