CREAM OF POTATO SOUP 
8-12 med. potatoes, peeled and diced
2 onions, chopped
6 c. 1% milk
8 tbsp. butter
6 tbsp. flour

Melt 2 tablespoons of butter in skillet, add onions, cover. Cook 15-20 minutes Stir onions occasionally. Cook potatoes in a saucepan while onions are cooking. In another saucepan, melt the remaining butter over heat, blend in flour. Add milk to flour mixture all at once. Cook quickly stirring constantly until mixture thickens and bubbles. Remove form heat when it bubbles. Add onions and potatoes to white sauce. Season to taste with salt and white pepper.

Add cauliflower florets if desired.
