CARROT CAKE 
2 1/2 c. flour, self-rising
2 c. sugar
3 c. grated carrots
1 tsp. vanilla
1 1/2 tsp. baking soda
2 tsp. baking powder
2 tsp. cinnamon
1/2 tsp. salt
1 c. Wesson oil
4 eggs

Mix sugar and oil. Beat well in a large mixer bowl. Add grated carrots and eggs, one at a time; beat well then add dry ingredients. Bake in three layers at 350 degrees for 30 minutes or until done.

ICING:

1/2 c. butter
1 tsp. vanilla
1 (8 oz.) pkg. cream cheese
1 box 10X confectioners' sugar

Mix well and spread on layers.
