BROWN RICE AND CHEESE CASSEROLE 
2 eggs, lightly beaten
1/2 c. heavy cream
1/3 c. water
1 1/2 c. cooked brown rice
1 1/4 c. grated Cheddar cheese
Salt to taste
1/4 c. chopped green pepper
2 tbsp. grated onion

Preheat oven to 350 degrees. Beat the eggs together with the cream and water. Stir into the rice. Add cheese, salt, green pepper, and onion; mix well. Turn into an oiled casserole and bake 45 minutes or until set. Yield: 2 servings (double recipe to serve more).
