SWEET AND SOUR CHICKEN 
1 lb. skinned and boned chicken breast, cut in cubes
2 tbsp. oil
1 c. each, red and green pepper strips
1 c. carrot matchsticks
3 tbsp. vinegar
1 (8 oz.) chuck pineapple in juice
1 1/4 c. chicken broth
2 tbsp. apple juice
1/2 tsp. ginger
1/4 c. lite soy sauce
1 1/2 c. raw Minute rice

Brown chicken in oil. Add vegetables and saute briefly. Add remaining items, except rice. Bring to boil. Stir in rice. Cover and remove from heat. Let stand 5 minutes.
