CREAM OF POTATO SOUP - PLUS 
4 c. cubed potatoes
1 c. finely chopped celery
1/2 c. chopped onion
Salt & pepper to taste
2-3 cloves garlic, crushed
1/4 c. butter
Milk
Cream
Chopped chives
1 c. chopped clams

1. Put cubed potatoes, celery, onion and garlic in a heavy saucepan. Add enough water to barely cover (about 2 cups). Salt to taste. Cook covered until potatoes are very tender. Do not drain.

2. Using a potato masher, mash the potatoes. Add butter and blend well. Add milk and cream in equal parts (about 1 cup of each) to obtain consistency desired. Season to taste and add garlic. Heat slowly until piping hot. Add 1 cup chopped clams, let set on low heat for 4-5 minutes. Serve sprinkled with chives and coarsely ground black pepper.
