CRUNCH BALLS 
3 slices day old white bread
2 tbsp. butter
2 c. mashed potatoes
1 egg, separated
Salt & pepper

Crumble 3 slices not-too-soft white bread (if you have no day-old bread, leave fresh bread open to the air for a few hours so that it dries out a little). Melt 2 tablespoons butter in a small skillet, add the crumbs and stir over moderate heat until the crumbs are lightly browned. Add 2 cups leftover mashed potatoes and 1 egg yolk. Beat well and season to taste with salt and pepper. Beat the egg white stiff and fold it carefully into the potato mixture. Drop by small spoonfuls into deep hot fat, 380 degrees F., and fry until brown.
