CAROUSEL PECAN PIE 
3 egg whites, beat until stiff
1 c. sugar
2 1/4 tsp. baking powder
1 tsp. vanilla
1 c. chopped pecans
1 sleeve Ritz crackers, crushed

Beat egg whites until stiff. Add sugar and baking powder. Fold in vanilla, pecans, crackers. Grease a pie pan or spray with Pam. Pour in pie and pat until firm. Bake 30 minutes at 300 degrees. Pie will not be brown. Cool and top with Cool Whip. Sprinkle with chopped pecans.
