GRANDMOTHER BRUSCHKE'S LEMON
COOKIES
 
4 c. flour (or enough to make a stiff dough)
1/2 lb. butter
2 c. sugar
3 eggs, whipped very light
1/2 tsp. baking soda
Juice of 1 lemon & grated peel from the outside

Beat thoroughly each ingredient, adding after all is in 1/2 teaspoon baking soda dissolved in 1 tablespoon of milk. Roll out as for any rolled cookie and bake in a 400 degree oven for 8-12 minutes. They will not brown on the top and you need to watch the time closely to make sure they do not get too brown on the bottom.
