HUMMINGBIRD MUFFINS 
2 c. bread flour plus 1 cup pastry flour
1 1/2 c. sugar
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
1 1/2 chopped bananas
8 oz. crushed pineapple, with juice
1 1/2 tsp. vanilla
3 eggs
2 c. chopped nuts
1 1/2 c. vegetable oil

Preheat oven to 350°F.

In a large bowl, combine flour, salt, sugar, soda and cinnamon and mix well.

Add remaining ingredients, stirring until well blended.

Fill greased or paper-lined muffin cups two-thirds full and bake for 25 to 30 minutes.
