GOURMET CASSEROLE 
1/2 to 3/4 lb. pork sausage
1 med. onion, chopped
1 med. green pepper, chopped
1/2 c. celery, chopped
1 c. wild rice, uncooked
1 can cream of chicken soup
1 can cream of mushroom soup
1 c. mushrooms
1 sm. can pimento
1 c. American cheese, grated

Brown sausage in large skillet, then add onion, green pepper, and celery. Continue cooking until vegetables are limp. Drain off excessive fat. Add rice, soups, mushrooms, pimento, and cheese. Mix well. Pour into 3 quart casserole. Cover and bake at 350 degrees over 1 1/2 hours. Makes 8 servings.
