AMIE'S PEPPERMINT CHOCO PUFFS 
3/4 c. butter
1/4 c. sugar
1 egg yolk
1 tsp. vanilla
2 c. flour
1/2 c. crushed peppermint
1 egg white
1/2 c. sugar
Semi-sweet chocolate chips

Cream butter until fluffy, add 1/4 cup sugar. Beat again. Stir in egg yolk and vanilla. Add flour a little at a time. Stir in crushed peppermint. Roll dough into 1-inch thick balls. Beat egg white slightly with fork. Roll each ball in egg white and remaining 1/2 cup of sugar. Place a chocolate piece in the center of each ball. Bake in ungreased pan at 350 degrees for 15 minutes. Place cookies on rack to cool.
