GARDEN FRESH PASTA 
4 oz. vermicelli, uncooked
1/2 c. carrots, sliced
1/2 c. radishes, sliced
2 c. cabbage, shredded
1 c. green onion, chopped
1/2 c. parsley, chopped
2 c. tomatoes, chopped
1/2 c. chicken broth
1/4 c. tomato paste
2 cloves garlic, crushed
1 tsp. basil
Pepper to taste
Tomato garnish
1 c. cheddar cheese, shredded

Prepare vermicelli according to package directions, set aside. Heat vegetables, seasonings, chicken broth, and tomato paste until vegetables are heated, but crisp. Serve vegetables over vermicelli. Sprinkle with cheese, garnish with tomato. Makes 4 servings. Costs only 59 cents per serving. Only 223 calories per serving.

Garden Fresh Pasta is similar to stir-fry dishes in that the vegetables are cooked for only a short time. They should be heated, but crisp.
