CRAWFISH FETTUCCINE | |
1 1/2 c. butter 3 med. onions, finely chopped 2 med. bell peppers, finely chopped 1/4 c. flour 4 tbsp. dried parsley 3 lbs. crawfish tails 1 pt. half and half cream 1 lb. Velveeta cheese, cut into sm. pieces 2 tsp. jalapeno relish 2 cloves garlic, minced Salt, red pepper, black pepper to taste 1 lb. fettuccine noodles, cooked Parmesan cheese Saute onion and bell pepper in butter, add flour, cover and cook about 15 minutes stirring frequently. Add crawfish and parsley and cook covered 15 minutes, stirring frequently. Add cream cheese, garlic, jalapeno, salt and pepper. Cook covered on low heat 30 minutes. Next add cooked noodles and mix well. Pour into baking dish. Sprinkle with Parmesan cheese and bake 20 minutes at 350 degrees. |
