FLUFFY HOT CAKES 
3 eggs
3 tbsp. melted butter
1 tbsp. sugar
1 1/2 c. flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1 1/3 c. buttermilk

Separate eggs. Beat yolks, butter and sugar until lemon color. Sift flour, soda, baking powder and salt together. Add flour mixture and buttermilk alternately to yolks. Beat until smooth. Beat egg whites until stiff. Fold into batter. Cook on a hot griddle.

1 cup fresh or frozen blueberries may added to batter for blueberry pancakes.
