CLAMS STUFFED WITH PORK 
2 doz. clams
1/2 lb. ground pork
2 slices fresh ginger, minced
1 stalk green onion, minced
1 tbsp. soy sauce
2 tbsp. sherry
1/2 tsp. salt
1/2 tsp. sugar

Steam clams and remove from shells. Mince clam meat and mix with the ground pork, ginger and green onion. Add soy sauce, sherry, salt and sugar. Stuff mixture into half shells. Arrange in a heat-proof platter, stuffing side up. Steam until pork is cooked, about 15 minutes.

COMMENTARY: One may substitute ground chicken or turkey or a combination of pork and poultry for the ground pork. We find that a bit of fat pork is essential for the best taste, but one can suit oneself.
