PUMPKIN-NUT BREAD 
3 1/2 c. all purpose flour
2 tsp. baking soda
1 1/2 tsp. cinnamon
1/2 tsp. baking powder
2 c. sugar
2/3 c. shortening
4 eggs
1 (16 oz.) can pumpkin
1/2 c. water
1 (9 oz.) pkg. condensed mincemeat, crumbled
1 c. chopped almonds

Preheat oven to 350 degrees. In a medium bowl, stir together flour, baking soda, cinnamon, and baking powder. In a large bowl, beat together sugar and shortening until fluffy. Add eggs, pumpkin, and water; mix well. Stir in flour mixture, mincemeat, and almonds. Spoon batter into 2 greased 9 x 5 x 3 inch loaf pans. Bake 55-60 minutes or until a wooden pick inserted near center comes out clean. Let cool in pan 10 minutes. Remove from pans and cool completely on wire racks.
