TIPSY SWEET POTATO PUDDING 
2 eggs
3/4 c. sugar
2 c. raw sweet potatoes, grated (about 2 potatoes, red yams preferably)
1 (12 oz.) can evaporated milk
1/2 c. milk
1/3 tsp. ground cinnamon
1/3 tsp. ground nutmeg
1/2 tsp. salt
1 c. shredded sweetened coconut
4 tbsp. butter, melted
2 tbsp. Jack Daniel's whiskey or orange juice
Whipped cream as garnish

Preheat oven to 350 degrees. Generously butter a 1 1/2 quart casserole dish.

Vigorously beat eggs and sugar together in large bowl. Stir in sweet potatoes, evaporated milk, milk, cinnamon, nutmeg, salt, coconut, butter and whiskey. Pour into prepared casserole dish and bake until barely firm, 1 hour.

Serve tepid, garnished with whipped cream. Makes 6 to 8 servings.
