GAZPACHO 
8 very ripe tomatoes, peeled, cored and chopped finely
1 lg. cucumber, peeled and diced
1 lg. onion, minced
1/2 green pepper, minced
1/2 c. salad dressing (3 parts oil to 1 part vinegar)
1/2 c.+ tomato juice (or "V8")
1/2 c. ice water
1 clove garlic

Rub a porcelain bowl with garlic until the clove is crushed, leave clove in and add the other ingredients (which can be blended beforehand for a smoother soup). Add salt and pepper to taste. Chill and serve in soup bowls with an ice cube in each. Also serve with croutons, and more finely chopped cucumbers, tomatoes, onions and green peppers, if you wish.
