GARLIC CHICKEN | |
2 chickens, separated into parts or better still, a 2 lb. pkg. of drum sticks Remove skin and make (2) incisions into each leg, then sprinkle with salt, pepper and red paprika and rub well into meat. A prior sprinkling with lemon juice will cause the meat to absorb the spices more thoroughly. Dip into marinade and bake on shallow tray in oven at 400 degrees for approximately 20 minutes, frequently basting with marinade and sprinkling with lemon juice. Toward end turn up heat for 5 minutes to 450 degrees to achieve browning. MARINADE: 1/4 c. vegetable oil Salt Pepper Paprika Curry powder Lots of parsley, finely chopped 6 garlic toes, also finely chopped Serve with French garlic bread. A dry white wine will go well with this dish. |
