EASY ELEGANT LAYERED DATE
PUDDING
 
3 pkg. instant vanilla pudding, made according to pkg. instructions
3 tbsp. rum or brandy or 1 tsp. rum or brandy flavoring
3 c. chopped Sun Giant dates
3 tbsp. fresh lemon juice
1 1/2 c. water
Whipped cream

Prepare pudding and add flavoring. Set aside. Mix dates, lemon juice and water; bring to a boil, lower heat and simmer until water is almost absorbed but not dry, about 3-4 minutes. Cool. Pour 1/3 of pudding in the bottom of a large glass bowl. Carefully add half of the date mixture. Repeat with another layer of pudding, then dates and ending with pudding. Chill. Just before serving top with unsweetened whipped cream.

To serve 4: Use 1 package pudding, 1 tablespoon rum or brandy, 1 cup dates, 1 tablespoon fresh lemon juice and 1/2 cup of water. Follow same directions. Use individual glasses or sherbet dishes.
