SYRUP: 1 1/2 c. water 1/2 tsp. cinnamon Dash salt 5 tbsp. sugar Preheat oven to 350 degrees. Bring to boil, stirring constantly. Boil until reduced (about half). 6 eggs 1 (12 oz.) can evaporated milk 1 (14 oz.) can sweetened condensed milk Dash salt 1/8 tsp. vanilla Beat eggs until thoroughly blended. Stir in milk, salt and vanilla. Pour syrup into a round glass casserole dish or glass pie pan (8" to 12"). Coat dish with syrup to prevent cheesecake from sticking. Now, very carefully to avoid mixing syrup with egg mixture, pour egg mixture into dish. Pour water on rimmed cookie sheet and place dish on sheet. Bake for approximately 60 minutes. To check to see if done, insert knife into middle of dish. If knife comes out clean, dish is done. Let it cool 15 to 30 minutes. Then invert onto plate and serve or refrigerate. |
