EGGPLANT PARMESAN 
1 eggplant
Parmesan cheese
Flour
Oil

Peel and slice eggplant as if you were making French fries. Soak in salted water for at least 30 minutes to remove the bitter taste. Drain.

Combine flour and lots of grated Parmesan cheese in a shaking bag. Shake a few pieces of eggplant with the flour mixture to coat well. Heat just enough oil in a frying pan to cover the bottom well.

Place the eggplant in the hot oil to fry. Brown on one side and turn over, brown other side. Watch carefully, because it will burn easily. Add more oil as necessary.
