FLANK STEAK 
1 tbsp. butter
2 med. onions, thinly sliced
1/4 tsp. salt
2 tbsp. salad oil
1 tsp. lemon juice
2 cloves garlic, crushed
1/4 tsp. pepper
2 lb. high quality flank steak, scored
1/2 tsp. salt

Stir together salad oil, lemon juice, garlic, 1/2 teaspoon salt and pepper; brush on top and sides of meat. Set oven for 550 degrees or broil meat 2 or 3 inches from heat, about 5 minutes or until brown. Turn meat and brush with oil mixture again. Broil just until rare, about 5 minutes longer. Cut meat across the grain at a slanted angle into thin slices. Serve with onions. Serves 6-8.
