POTATO SOUFFLE 
2 c. warm or cold mashed potatoes
1 (8 oz.) pkg. cream cheese, softened
2 eggs
1 sm. onion, chopped
2 tbsp. flour
1 (3 1/2 oz.) can French fried onions
Salt & pepper to taste

Mash potatoes in large bowl. Use only 1/2 as much milk as usual. Add cheese, eggs, onion and flour. Beat at low speed until blended, then on high until light and fluffy. Season with salt and pepper. Place in greased 9 inch round baking pan. Top with French fried onions. Bake in oven at 300 degrees for 25 minutes. May be prepared ahead and refrigerated unbaked.
