POTATO PANCAKES 
4 potatoes
1 egg
1/2 tsp. salt
2 tbsp. flour
Crisco, no substitutes
Sour cream
Applesauce

Peel potatoes and place in water if any time elapses between now and the grating of the potatoes. Grate in food processor or by hand. Use shredder that makes potatoes come out looking like the shredded mozzarella cheese. Frying pan should be ready with Crisco in and already heated, but not up to 375 to 400 degrees. (Best taste when eaten immediately and fried immediately after mixing ingredients.) Put in flour and salt and mix. Add in egg and mix thoroughly. Shortening should be hot at this point. (Center of mixture must not be thicker than sides so after placing small amount in pan, gently push down in center of mixture with edge of spoon. Flip over when bottom side is brown and crisp. When done, drain on paper toweling. Great with sour cream and/or applesauce. Serves 4.
