WATERMELON PICKLES | |
7 lbs. watermelon rinds 7 c. sugar 2 c. vinegar 1/4 tsp. oil of cloves 1/4 tsp. oil of cinnamon First day - peel watermelon rind and cut in 1 inch cubes and soak overnight in salt water (2 tablespoons salt to 1 quart water) Second day - drain, cover with fresh water and cook until almost tender. Drain the watermelon and make a syrup of the sugar, vinegar, and oils. Heat the syrup and spices to boiling and add drained watermelon rind. Let set overnight. Third day - drain syrup from the rind and heat to boiling and pour over rind again. Let set overnight. Fourth day - Pack in hot jars and process to seal. |
