WATERMELON PICKLE | |
20 c. rind 7 c. sugar 2 c. vinegar 1/4 tsp. oil of cloves 1/2 tsp. oil of cinnamon Cover rind with water and parboil until you can pierce with a fork. Drain water from rind. Mix sugar, vinegar, oil of cloves and cinnamon; bring to a boil all the while stirring mixture. Pour over the rind and let stand overnight. Next morning drain syrup from rind and reheat it. Pour it over the rind. Next morning repeat the draining and reheating of the syrup, as well as returning the syrup to the rind. Again let overnight. On the third morning drain the syrup again and reheat it. When it comes to a boil put the rind in jars covering with the syrup. Seal. |
