POTATO POPPERS 
1/8 onion, chopped
1 c. cooked brown rice
1 c. whole grain bread crumbs
1/2 tsp. salt
1 c. mashed potatoes
2 tbsp. tomato sauce

Preheat oven to 350 degrees. Simmer onion in small amount water. Combine all ingredients and form into 1 1/2" balls. Bake until delicately browned; about 15 minutes. Makes about 12.
