TWICE BAKED POTATOES 
4 baking potatoes, washed and patted dry
1/2 c. butter, softened
1 c. shredded Mozzarella cheese
1 c. shredded Cheddar cheese
Black pepper to taste
1 tbsp. parsley flakes

Pierce potatoes with fork and place in microwave. Cook on high 12-14 minutes until fork tender.

In medium bowl, combine butter, 3/4 cup Mozzarella cheese, 3/4 cup Cheddar cheese, pepper and parsley flakes. Cut potatoes in half, scoop insides into bowl with cheese. With electric mixer, mix potato mixture until well blended. Spoon mixture into potato halves.

In small bowl, combine remaining cheeses and sprinkle over tops of potatoes. Place in microwave and cook 3-5 minutes on high or until cheese is melted.

Since microwave ovens vary in power, you may need to adjust your cooking time.
