QUICK PUMPKIN BREAD | |
1 3/4 c. sifted all-purpose flour 1/4 tsp. baking powder 1 tsp. baking soda 1 tsp. salt 1/2 tsp. cinnamon 1/4 tsp. ground cloves 1 1/3 c. shortening 2 eggs 1 c. cooked or canned pumpkin 1/3 c. water or milk 1/2 tsp. vanilla 1/2 c. chopped nuts Preheat oven to 350 degrees. Sift together flour, soda, baking powder, salt, cinnamon, and cloves. In a large bowl, beat until light and fluffy the shortening and eggs. Add pumpkin and beat in. Now add the sifted dry ingredients in 3 additions alternately with water or milk and vanilla. Add nuts. Pour batter into a greased pan and bake about 1 hour or until bread tests done. Makes 1 (9x5 inch) loaf. |
