POTATO LATKES 
2 cups grated raw potatoes (4-5 large)
1 medium onion
2 eggs
1/2 tsp. baking powder
1 1/2 tsp. salt
Dash pepper
1/4 cup matzo meal
Peanut oil

Pare vegetables and grate (use a food processor grating disc).

Add eggs, baking powder, salt, pepper, and matzo meal.

Drop by tablespoons into hot peanut oil which is almost deep enough to cover the pancakes.

Fry over moderate heat until browned on one side. Turn and brown other side. Drain on absorbent paper.

Serve with a dollop of sour cream or applesauce.

Serves 4-6.
