TURKEY MINESTRONE 
2 tbsp. butter
2 tbsp. cooking oil
1 pkg. fresh ground turkey, about 1 1/4 lb.
1/2 c. onion, chopped
2 cloves garlic, finely chopped
5 c. beef broth
2 c. cabbage, chopped
1 c. zucchini, diced
1 c. carrots, diced
1 (15 1/2 oz.) can whole tomatoes, undrained and cut up
1 (10 oz.) frozen green beans, thawed
1 tsp. dried basil leaves
Parsley

Heat butter and oil in Dutch oven over medium high heat until butter is melted. Crumble turkey into Dutch oven; stir in onion and garlic. Cook until turkey is no longer pink. Stir in broth, cabbage, carrots, zucchini, tomatoes, green beans, basil, and parsley. Salt and pepper to taste. Reduce heat. Simmer until vegetables are tender. Sprinkle with grated cheese upon serving.
