RICE DRESSING FOR WILD DUCK 
Giblets, chopped
1 tbsp. bacon drippings or shortening
1 tbsp. flour
2 onions, chopped
2 ribs celery, chopped
1/2 green pepper, chopped
2 cloves garlic, minced
1/2 tsp. red pepper
1 tsp. salt
1 1/2 c. hot water
3 c. cooked rice

Combine fat in skillet with flour and brown slowly to make roux. Stir in giblets, onions, celery, pepper, garlic and seasonings. Add hot water and cook over low heat for 1 hour. Add cooked rice. Serves 8.
