CAROB FUDGE COOKIES 
1 c. whole wheat flour
3 tbsp. oat bran
1 tsp. baking soda
1/4 tsp. salt
2 tbsp. carob powder

Melt in saucepan.

1/3 c. frozen apple juice concentrate
1/4 c. honey
1 c. carob chips
2 tbsp. oil
1 tsp. vanilla

Combine melted ingredients with dry and mix well. It will bubble and expand as the cooking process continues. Add 3 tablespoons carob chips or 2 ounces chopped nuts if desired.

Drop into muffin tins about 1/4 full. The nuts and chips can be pressed onto the top of each muffin. They don't rise much, but seem better as a cookie.

Bake 10 to 15 minutes at 350 degrees.

Makes 2 dozen.
