PUMPKIN FRUIT CAKE | |
2 c. sugar 1/2 c. salad oil 16 oz. canned pumpkin 1 tsp. vanilla 2 1/2 c. plain flour, sifted 2 tsp. baking soda 1 tsp. cinnamon 1/2 tsp. allspice 1/2 tsp. salt 1/2 to 1 c. pecans 4 oz. chopped dates 16 oz. fruit cake mix Grease and flour tube pan. Mix all ingredients. Pour mixture into pan. Bake in preheated oven at 325 degrees for 1 hour and 20 minutes. Age several days before serving. |
