EASY STRUDEL CAKE 
2 (16 oz.) cans of fruit (peaches, pears, etc.)
1 yellow cake mix
1 c. butter (melted)
Optional: cinnamon and chopped nuts

Grease 9 x 13 inch cake pan. Drain fruit, saving 1 cup juice. Pour fruit and 1 cup juice into pan. Sprinkle 1 box yellow cake mix over fruit. Pour melted butter over cake mix.

Optional: Sprinkle top with cinnamon or chopped nuts. Bake at 350 degrees for 1 hour. Serve with whipped cream or ice cream.

This is TASTY! Comfort food as it has both shortbready parts and gooey puddingy parts. A little science experiment too, watching it bake: the butter goes down and the fruit moisture spreads out. Easy, economical (coupons and specials on cake mixes and canned fruit are the reason I made this), and a great way to kick off the first small group church meeting. Thanks!

I was a complete non believer. I went into this recipe thinking the worse, but I had nothing to lose--I had gotten a couple of canned pears for free and I had a box of cake mix for $1.88... so I wouldn't be out a lot of money when it didn't come out... boy was I wrong. I have no idea how it happens, what magic or chemical reactions needed to happen, but it came out DELICIOUS!! I poured the two cans in with 1c juice, a box of lemon cake mix (that's what I had) melted butter (I was worried that it didn't cover all of the cake mix, but I said, oh well), then I sprinkled cinnamon all over (probably a couple of teaspoons, and a few walnuts (those are kinda expensive, so I didn't want to waste those) put it all in the oven and an hour later --- wow. EVERYONE loved it. I was all worried because I forgot to spray the pan, but no worries.. didn't stick that much. All I can say is that it was yummy! Next time, however, I will sprinkle the cinnamon on the pears and definitely add more walnuts. I went and bought a yellow cake mix, just to make it like the recipes calls and see how that works.
