SCALLOP SAUTE 
1 lb. fresh sea scallops
1 pkg. linguini or thin spaghetti
4-6 cloves garlic, peeled and sliced
Olive oil, 1/2 to 1 c.
1/2 lb. mushrooms, sliced
1-3 bunches scallions, coarsely chopped
Parmesan cheese
Pepper, optional
Shallots, fresh parsley

Cook pasta as directed. In large frying pan heat 1/2 cup olive oil and saute garlic until lightly brown. Add scallops and saute 2-3 minutes until opaque.

Add scallions and mushrooms (optional shallots and fresh parsley) and stir fry until tender-crisp, about 2 minutes. If needed, add more olive oil to pan.

Drain pasta and toss with scallop mixture. Top with Parmesan and black pepper. Garlic lovers delight!

Excellent "friends" meal. Serve with garlic bread, green salad and white wine. Enjoy!
