VINEGARS 
1 gallon white distilled vinegar
1 1/2 c. fresh herbs on the branch

Heat the vinegar to a simmer in a large pot. Add the herbs and remove from heat. Let the mixture cool and place in a large, covered jar. Let it steep for 2 weeks before straining through cheesecloth and placing in individual lidded bottles. Insert fresh herb sprigs for show.
