SOUR CREAM & POTATO BAKE 
5 med. potatoes
1/4 c. butter
1 c. sour cream
1 c. grated cheese (of choice)
1/2 c. chives
1/4 c. bacon bits

Preheat oven to 350 degrees. Poke potatoes with fork several times. Microwave for 10 minutes to 20 minutes, rotating at 5 minutes (cook longer if necessary). Split potatoes in half scoop out inside and put the potatoes in bowl.

Butter skins and place in shallow baking dish. Mix sour cream, cheese and potatoes. Spoon back into skins. Bake at 350 degrees for 15-20 minutes or until cheese melts. Serve hot and sprinkle chives and bacon bits as desired.

Since microwave ovens vary in power, you may need to adjust your cooking time.
