EASY GARDEN VEGETABLE PIE 
2 c. fresh broccoli or cauliflower or 1 c. of each
1/4 c. chopped onions
1/4 c. green peppers
1 sm. fresh tomato
1 c. shredded cheddar cheese
1 1/2 c. milk
3/4 c. Bisquick
3 eggs
1 tsp. salt
1/4 tsp. pepper

Cook broccoli or cauliflower 5 minutes. Drain well. Spread all vegetables and cheese on a greased 10" x 1 1/2" pie plate, making sure chopped tomato goes on last (for a pretty pie). Sprinkle with salt and pepper. Beat remaining ingredients 15 seconds in blender or 1 minute with hand mixer. Pour over vegetable and cheese. Bake at 400 degrees for 35 to 40 minutes or until golden brown. Let stand 5 minutes before cutting.
