SPAGHETTI IN GARLIC TOMATO 
1/2 lb. dried spaghetti
3 tbsp. olive oil
5 cloves garlic, peeled & smashed with the flat side of knife
1 lg. tomato, chopped
1/4 c. chopped basil leaves
1 c. favorite tomato sauce
Freshly ground black pepper

1. In 6 quarts of boiling water cook the spaghetti for about 8 minutes, until tender, but not soft. Drain and set aside.

2. In a large sauce pan, heat the olive oil over medium-high heat. Add the garlic and cook for 5 minutes, until cooked through and translucent, but not burned. Remove from the heat and let the garlic infuse with the oil for 5 minutes. Add the tomato, basil, tomato sauce and pepper, to taste, heat through. Add the drained pasta to the sauce and toss to combine. Makes 2-3 servings.
