FRESH SPINACH SALAD 
1 bunch spinach leaves (sort, wash, dry)
1/2 c. red onion rings
1 avocado sliced
1/2 c. broken walnuts
2 oz. Fetz cheese, crumbled

BASIL DRESSING:

1/2 c. olive oil
1/4 c. wine vinegar
2 tsp. sugar
2 lg. garlic cloves, smashed
1 tbsp. dried basil
Salt and pepper

Mix dressing several hours ahead. Strain over salad and toss at serving time. May omit walnuts or substitute sunflower nuts, etc.

This dressing is good on most any tossed salad.
