POPPY SEED MUFFINS 
2 c. flour
3 tsp. poppy seeds
1/2 tsp. salt
1/4 tsp. baking soda
1 c. sugar
1/2 c. butter
2 eggs
1 c. yogurt
1 tsp. vanilla
2 tsp. almond extract (optional)

Mix the first 4 ingredients in a small bowl. Cream the sugar and butter. Add the eggs to the sugar/butter mixture, one at a time. Then add 1 cup yogurt and 1 teaspoon vanilla. Add flour mixture. Add 2 teaspoons almond extract for distinct flavor, if desired. Mix until all ingredients are moist. Fill muffin cups 2/3 full.

I made them and the recipe yields about 16 muffins. It is best to cook them at 350°F for about 20-25 minutes. Good Luck!
