PARISIAN ORANGE COOKIES 
2 tbsp. orange rind, coarsely grated
1/2 c. water
1/4 c. sugar
1/2 c. butter
1 c. sugar
1 tbsp. sherry flavoring
1 1/4 c. all-purpose flour
1 tbsp. baking powder
1/2 tsp. salt

Heat oven to 375 degrees. Blend orange rind, water and 1/4 cup sugar in saucepan; boil gently over medium heat 10 to 15 minutes, until mixture is thin syrup consistency. Add enough water to make 1/4 cup syrup. Cream butter, 1 cup sugar and flavoring until fluffy. Measure flour by sifting; blend dry ingredients. Stir syrup, then dry ingredients into creamed mixture; mix thoroughly. Roll in 1 inch balls. Place 2 inches apart on lightly greased baking sheet. Flatten with bottom of greased glass dipped in sugar. Bake about 8 minutes. Makes 4 1/2 dozen cookies.

Note: If you use self-rising flour, omit baking powder and salt.
