BANANA NUT BREAD | |
1/2 c. butter 2 eggs, beaten 2 c. flour 1/2 tsp. salt 1/2 c. buttermilk 1 c. sugar 3 med. bananas, mashed 1 tsp. baking soda 1 c. chopped nuts 1 tsp. vanilla Cream butter and sugar until light and fluffy. Add egs, and mix thoroughly. Add bananas. Dissolve soda in buttermilk, and add it. Sift dry ingredients, and add to banana mixture. Stir in nuts. Pour into greased 9 1/2 x 5 1/4 x 2 3/4 inch loaf pan. Bake at 375 degrees for 15 minutes, then reduce heat to 350 degrees for 45 minutes longer. Makes 9 inch loaf pan. NOTE: For moister bread, use more bananas. |
