POT ROAST 
1 bag carrots (cut sm.)
1 lg. onion
12 ginger snaps cookies
1 jar sweet relish
1 bottle chili sauce
3 stalks celery (cut sm.)

Put small amount of olive oil in Dutch oven. Add meat and brown well on all sides. Add onions and brown. Remove meat.

Add 7 cups water to onions and bring to a boil. Add 3/4 jar of sweet relish, 3/4 bottle chili sauce. Cook 1/2 hour, with meat in pot.

Add sliced carrots and celery and continue cooking 15-20 minutes. Remove meat. Add ginger snaps (finely broken up) and bring to boil. Cook until cookies are dissolved. Return meat to pot and cook covered for 1 hour.
