2 eggs, well beaten
3 c. flour
2 c. granulated sugar
1 tsp. salt
1 tsp. baking soda
2 tsp. cinnamon
4 c. cubed apples (Granny Smith, Courtland are best)
1 c. oil

Mix all ingredients at once by hand. Batter will be crumbly. Bake 1 hour at 350 degrees. Use greased tube pan or 9 x 13 inch oblong.
