SAFFRON RICE 
1/2 c. rice, uncooked
1 c. chicken broth
1/4 c. butter
1 tsp. onion
Saffron to yellow or taste

Put rice in 1 1/2 quart oven casserole dish. Put broth in pan. Boil, add butter, saffron, and onion. Mix. Pour over rice, cover. Bake at 375 degrees for 1/2 hour until tender. If too moist let stand uncovered in off oven 5-10 minutes. Add Parmesan cheese to taste.
